Costco sells RYC Arrachera and it is fantastic on the grill. The arrachera is a marinated skirt steak that has been enhanced (up to 22% by weight) with a seasoning solution as well as a natural meat tenderizer. There is so much marinade in the steak that it will come out juicy even if you overcook it on the grill.
The arrachera is amazing for tacos and fajitas. You get around four pounds of the marinated skirt steak per package so you will have enough steak to feed 6-8 people.

How to Grill the Arrachera From Costco
You could cook this steak in a cast iron skillet on your stovetop but this steak was meant to be grilled.
We used our Weber Q for this cook and had to cook the steak in two batches due to size constraints. This was one of those occasions when I wish we had a full sized Weber Genesis with a Sear Station so we could grill everything at once.
You will get more flavor if you cook the steak with a charcoal grill but for something that cooks this fast it doesn’t seem like it is worth the bother of lighting a bunch of charcoal.
Start by turning your gas grill to High and letting it preheat for at least 15 minutes. You need to give those heavy cast iron grates time to get hot.
Place the steak on the grill and use your tongs to press the meat against the grates so you get some nice grill marks.
Skirt steak is pretty thin so it cooks up fast.
Let the steak grill with the lid closed for four minutes.
Give the steak a flip, close the lid and grill for four more minutes.
The packaging says to cook the steak to an internal temperature of 165F but I like to cook it to 135F. It really doesn’t matter if you cook this stuff to 140F, 150F or 165F it is still going to turn out juicy and flavorful.
Slice and Serve the Grilled Arrachera
Take a look at the grain structure and you will see that it runs “North South” along the width of the steak.
You really want to slice this steak against the grain so the best way to do this is to:
- Slice the steak in half WITH the grain.
- Rotate the steak 90 degrees.
- Slice the steak thinly AGAINST the grain.
We are big fans of steak tacos at our house and that is how we use this steak.
Warm up your tortillas of choice, add some grilled peppers or Pico de Gallo along with cilantro, avocado and a squirt of lime juice and you will have a world class taco in your hand.
Costco Arrachera Grilled Tacos
- Weber Gas Grill
- 4 lbs RYC Arrachera from Costco
- 1 Avocado, sliced
- Cilantro, chopped
- Pico de Gallo
- Preheat your grill on high for 15 minutes.
- Place the steak on the grill and cook with the lid closed for 4 minutes.
- Flip the steak and grill for 4 more minutes until desired temperature is reached. The package says 165F but we take it off sooner (135F).
- Slice the steak thinly against the grain.
- Warm your tortillas, assemble the tacos and serve!
A quarter pound of the marinated skirt steak is a single serving and has the following nutritional information:

The high sodium content comes from the marinade and brings a lot of flavor. Due to the leanness of the steak it has fewer calories and less fat than Costco’s frozen hamburgers so this is a healthier meal option from your grill.
Price of RYC Arrachera at Costco
The arrachera is Item Number 34669 and is found in the meat cooler with the other steaks.
The marinated skirt steak costs $8.99 and comes in packages that weigh around 4 pounds. This means that the package of arrachera will cost around $35.
This makes the skirt steak just about the same price as the Flank and Flap steaks at Costco which is just about right.
