Costco is selling packages of Beef Plate Short Ribs and if you spot them at your warehouse then you should pick some up. These short ribs are a prized cut known as “Dino Bones” in the barbecue community and are extremely hard to find.
With their rich marbling and meaty texture beef short ribs can be cooked in a variety of ways. That being said, we believe using them for barbecue is the way to go.
When properly smoked the meat will pull back a few inches from the bone to create a spectacular presentation that is often called “Brisket on a Stick”.
How to Cook the Beef Plate Short Ribs
There are all sorts of ways of cooking beef ribs but our favorite method is to slowly smoke them on a barbecue pit.
- Start by using a paper towel to grab onto and remove the thick membrane on the bone side of the ribs.
- Add a this layer of yellow mustard to the meat to act as a binder for the dry rub.
- Season the ribs heavily with a beef rub (there is a recipe below) and let the rub sit on the meat for an hour.
- Fire up your smoker to 275F using hickory or post oak for smoke.
- Put the ribs on the pit and smoke for 6-7 hours.
- The ribs are done when they reach an internal temperature of 205F and a toothpick slides through the meat like butter.
Beef Rib Dry Rub Recipe
- 3 tbls salt
- 3 tbls black pepper
- 1 tbls chili powder
- 1 tbls smoked paprika
- 2 tsp sugar
- 1/2 tsp MSG

Costco Beef Plate Short Dino Ribs
Ingredients
- 5 lbs Beef Plate Short Ribs
- 3 tbsp Yellow Mustard
- 3 tbls Salt
- 3 tbls Black Pepper
- 1 tbls Chili Powder
- 1 tbls Smoked Paprika
- 2 tsp Sugar
- 1/2 tsp MSG
Instructions
- Remove the membrane from the bone side of the ribs.
- Coat the meat with a thin layer of yellow mustard.
- Combine the dry rub ingredients and season the ribs.
- Let the seasoned beef ribs rest at room temperature for one hour.
- Set your smoker to 275F.
- Smoke the ribs for 7 hours until an internal temperature of 205F is reached.
- Remove ribs from the pit and serve with potato salad, pickles, sliced onion and white bread.
