We bought the Costco Chicken Enchilada Bake to try as a family dinner last week and came away with mixed feelings.

On one hand the meal was easy to prepare, loaded with chicken and there was plenty of food to feed our hungry family of four.  On the other hand, the sauce was overly spicy and lacking in flavor.  Additionally the texture was a little off and had a funky ‘mouth feel”.  Does that make any sense?

We did a quick poll around the dinner table and the average vote between the four of us was that the meal rated a 6.5 out of 10.

  • Preheat your oven to 400 F
  • Remove the plastic lid
  • Cover the tray loosely with aluminum foil
  • Bake for 50-60 minutes or until the internal temperature reaches 165 F.

You can take the foil off for the last few minutes to help with browning.

Taste and Texture

While the dish looked appetizing when it came out of the oven, the taste and texture didn’t quite live up to expectations. The main issue was the sauce, which was very spicy and didn’t taste good at all. Luckily, most of the sauce was on top of the bake, so it was easy to scrape it off and enjoy the rest of the dish.

One thing that was good about the Costco Chicken Enchilada Bake was the taste of the rotisserie chicken. It was tender and flavorful, with plenty of generous chunks throughout the bake. Inside the bake, there were also corn tortillas, pinto beans, corn, shredded cheddar cheese, and diced bell peppers.

  • Cover the tray loosely with aluminum foil.

  • Allow the enchiladas to cool for five minutes.
  • Serve the enchiladas with the rice and refried beans. Top with sour cream if desired.

Final Thoughts

While the Costco Chicken Enchilada Bake has the potential to be a quick and easy weeknight meal, it ultimately fell short in taste and texture.

While the rotisserie chicken was a highlight, the sauce was too spicy and overpowering. We checked the Facebook groups dedicated to Costco fanatics and saw that the spiciness was highly variable.  Sometimes these enchiladas are really spicy and sometimes they are pretty mild so it looks like it is a bit of a crap shoot.

If you’re looking for a delicious and convenient Mexican dish, you might be better off making enchiladas from scratch or finding a different premade option.
